CAROLINA SÁNCHEZ
Carolina es la primera cocinera ecuatoriana galardonada con una estrella Michelin. Fue otorgada en 2018 por el restaurante Ikaro. Carolina se formó en su natal Cuenca, Ecuador y luego continuó en el Basque Culinary Center en San Sebastián, España. En 2017 abrió el restaurante Ikaro junto a su pareja Iñaki donde se conjugan las gastronomías: ecuatoriana, riojana y vasca. Carolina es orgullosa de sus raíces ecuatorianas y lo demuestra en su cocina.

Carolina is the first Ecuadorian chef to win a Michelin star. It was awarded in 2018 for the Restaurante Ikaro. Carolina received her first culinary formation in her native Cuenca, Ecuador and later received a Master´s degree from the Basque Culinary Center, in San Sebastian, Spain. With Iñaki, her Spanish significant other, they created the Michelin star restaurant Ikaro that combines Ecuadorian, Rioja and Basque traditions. Through her cooking, Carolina proudly showcases her Ecuadorian roots.
MARIANO VALDERRAMA LEÓN
Mariano has extensive experience in local, national and regional development. He holds a Ph.D. from Heidelberg University in Germany, and has various publications on regional development, international cooperation and gastronomy. He was Vice President and General Manager of the Peruvian Society for Gastronomy – APEGA from 2007 to 2017, which organizes Mistura, the most important food fair in Latin America.
LIBERTAD REGALADO ESPINOZA
For more than two decades, Libertad has investigated cultural manifestations in the province of Manabí, Ecuador. She has published books on both culinary and artisanal culture in Manabí. She is a university professor, writer and member of the Number of the National Academy of History of Ecuador.
JAN KRAG JACOBSEN
Jan has been active for forty years on the Danish culinary and gastronomic scene as a writer, radio and television journalist, event organizer, project developer, and educator. He is an ex-president of the Gastronomic Academy of Denmark. Jan helped formulate the Manifesto for the New Nordic Cuisine and helped develop the New Bolivian Cuisine.
MARTIN LAURENT DICKLER
Martin was the director and one of the founders of the Gustu Restaurant and School Project in La Paz, Bolivia, recently chosen as one of the best restaurants in Latin America. Martin has worked for various international cooperation for development organizations throughout the world.
MICHELLE O. FRIED
Through her contributions in books published by the United Nations, in newspapers and on radio, Michelle is a spokesperson for the nutritional values of traditional Andean food. She also has two cookbooks that highlight native products and their traditional and innovative uses, with sales of more than 50,000 copies.
ORAZIO BELLETTINI CEDEÑO
Orazio, a social entrepreneur born in Manabí, is an Ashoka Fellow who specializes in public policy. Orazio is an agent for change committed to social transformation, and has led several public-private partnership initiatives aimed at promoting social and productive innovation at national and local levels.
MARIANO VALDERRAMA LEÓN
Mariano tiene amplia experiencia en el desarrollo local, nacional y regional. Tiene un Ph.D. de la Universidad de Heidelberg en Alemania, y tiene varias publicaciones sobre desarrollo regional, cooperación internacional y gastronomía. Fue vicepresidente y gerente general de la Sociedad Peruana de Gastronomía – APEGA de 2007 a 2017, la cual organiza Mistura, la feria gastronómica mas importante de América Latina.
LIBERTAD REGALADO ESPINOZA
Desde hace más de dos décadas Libertad viene realizando investigaciones relacionadas con las manifestaciones culturales de la Provincia de Manabí, ha publicado varios libros relacionados con la culinaria y la artesanía manabita. Es docente universitaria, escritora y miembro de Número de la Academia Nacional de Historia del Ecuador.

Jan ha sido por cuarenta años un promotor activo de la gastronomía Danesa como escritor, periodistas de radio y televisión, organizador de eventos y educador. Adicionalmente, presidió la Academia de Gastronomía de Dinamarca. Jan participó en la formulación de El Manifiesto de la Nueva Cocina Nórdica y apoyó el desarrollo del Manifiesto de la Nueva Cocina Boliviana.

Uno de los fundadores y Director del Proyecto Restaurante-Escuela Gustu en La Paz, Bolivia, recientemente elegido entre los mejores restaurantes de América Latina. Martín ha trabajado para diversas organizaciones de cooperación a través del todo el mundo.

Vocera de los valores nutritivos de la comida tradicional andina, por sus aportes en libros publicados por las Naciones Unidas, en periódicos y por radio. Además tiene dos libros de cocina que destacan los productos nativos y sus usos tradicionales e innovadores, con venta de más de 50,000 ejemplares.

Empresario social nacido en Manabí y un Fellow de Ashoka, especializado en políticas públicas y un catalizador comprometido con la transformación social. Ha liderado varias iniciativas de colaboración público-privada orientadas a promover la innovación social y productiva a nivel nacional y local.
