The Iche Food Innovation Lab is designed as a technologically equipped space to co-create new ways to both value traditional food and to innovate upon it, always based on the culinary culture of Manabí.
Many different actors in the culinary ecosystem with the aim of adding value will identify the potential of specific local foods and dishes that is not presently being tapped.
The students in the Food School will co-create culinary innovations with experts in food science and enterprises. Each potential initiative will be investigated for its feasibility, using sensory testing, shelf life testing and quality control.
FUEGOS intends to contribute to the establishment of an Ecosystem for open and
inclusive innovation, bringing together collaboration from State institutions, civil
society organizations, international cooperation agencies, the private sector,
international humanitarian and development organizations and academic entities from
Ecuador and the rest of the world.
In this way, traditional knowledge is valued and empowered along with science and technology in order to ensure that Manabí is a province that innovates by harnessing its culinary identity.
FUEGOS aims to share the flavors of Manabí with the rest of the planet and create a space in which cooks and young people from Manabí and the rest of the world get together to exchange knowledge and experiences, to identify opportunities for join learning and to create new endeavors and flavors.
FUEGOS’ Advisory Board is made up of people from many different walks of life who share both the passion and conviction that food can be a driving force to bring about social change.
